Smoked Turkey And Strawberry Salad

Ingredients

| 1/2 | cup | Smucker's Strawberry Jelly | |

| 2 | tablespoons | red wine vinegar | |
|
|
|||
| 2 | teaspoons | lemon peel, grated | |
|
|
|||
| Salad: | |||
| 4 | cups | baby spinach | |
|
|
|||
| 2 | cups | deli smoked turkey breast, cubed | |
|
|
|||
| 1-1/2 | cups | fresh strawberries, sliced | |
|
|
|||
| 1 | can | (11 oz.) mandarin oranges, chilled and drained | |
|
|
|||
| 2 | slices | red onion, thinly sliced, separated into rings | |
|
|
|||
Directions:
Dressing:
In small saucepan, combine jelly, vinegar and lemon peel. Cook over medium high heat until jelly is melted, stirring frequently. Cool 10 minutes.
Salad:
Arrange spinach, turkey, strawberries, oranges and onions on 4 salad plates; serve with dressing.
